The Dank Side

This hazy ipa denotes the first in a series of us diving into some of the fun advances in brewing techniques and products that are very new and cutting edge.  A simple grist bill of 2 row barley, chit malt and a combo of flaked and malted oats lead the way here.  The beer name is very intentional, as we chose the darkest and dankest hops that we could find - CTZ and Mosaic Incognito in the kettle and double dry hopped with a combination of CTZ Cryo, Ekuanot Cryo and Simcoe Cryo.  But this is where the fun comes in.  We co-fermented this with our house hazy yeast from Omega labs along with a Thiol boosting yeast that is usually used to ferment white wine.  In addition to that, we added enzymes that help aid in the biotransformation of some o Show Less
