Salatura

With temperatures rising our need from a beer change ever so slightly. Our desire for something low in alcohol, tart, and refreshing is anything but a hoax. With Salatura we re-imagined the classic Gose, using only the ingredients one would expect but from various sources around the world. We swapped out traditional coriander for its brighter and fruitier cousin, Indian coriander which weeps complex notes of earthy lemon peels, dry hay, and freshly peeled bark. Instead of the typical tiny bittering addition of hops, we threw in a tiny burst of Lemondrop hops at the very end of the boil to give this Gose its trademark minuscule bitterness but also a hint of lemon candies and cut grass from this hop we've grown so fond of. The last stop on this locomotive of crushability is Italy where we imported some amazing truffle salt that gives this Gose the salinity you want but also deep undertones of salty umami that balance the bright lemon-like acidity to create an intercontinental Gose prime for the next heat wave.
