Of the Wild: Botanical Brett

Brettanomyces is a family of yeast, sometimes used in Belgian-style beers, and commonly referred to as wild yeast. We’re working on a line of Brett-forward ciders that feature the distinct flavor profile the yeast produce. We were able to capture a Brett-forward blend by using Plum Flowers as our yeast source, and are thrilled with its character. Botanical Brett is the second in the series, rested with hand-picked Lemon Balm, Mugwort, and Thyme. The plants combine for a lovely herbal lemon undertone, complimenting the character of our wild yeast blend in the best of ways. Please enjoy this Botanical Brett! Show Less
