We have been talking amongst ourselves about doing a yuzu variant of Kaizen, our Japanese-style rice lager, for a long time. Fantasizing might be a better word for it. Well, today, for one-off Wednesday, we didn't make yuzu Kaizen. Turns out yuzu is super seasonal and is difficult to come by fresh.
So we did the next best thing. We hand-selected cara-cara oranges, Meyer lemons, and limes, zested them, and then added all of that zest to Kaizen along with the juice of the lemons and limes.
