Original Gravity Haze

For us what makes a NEIPA interesting and distinct is its reduced bitterness (compared to a West Coast IPA) and silky mouthfeel. We accomplished these by using a fairly small quantity of bittering hops and by using a lot of high-protein grains in the grist bill (un-malted oats and wheat). We added some green apple puree to the boil to set a pectin haze, and add a hint of viscosity and tartness. We also added a lot of late hops.
