Phoenix Ryesing - Opening Day (2021)

Part of the Kolby Legacy Series.

Collaboration with Pro Approved bat maker, Phoenix Bats of Ohio. After being roasted at our friends Venus Pie of Spartanburg, charred ash, birch and maple spires plunge into the young beer of rye, two row and bitter hops. Hissing and popping, blazing with fierce flames they succumb and fall to the bottom, down...down...down, to silence.

For 14 days they lay still, quiet, lifeless. Then, as if from a dream, the wood having given up their smoke, their resins, esters and sweet tannins, what is left in their wake is a sweet, smokey, malty beer called Phoenix Ryesing. Show Less
