Polyfunctional Session IPA

Our first experimentation with Phantasm! We brewed a simple base wort of US Pilsner, White wheat, and Chit malt, and hopped it in the Whirlpool with Amarillo and NZ Belma. Before we sent it to the tank, we added more Amarillo and NZ Belma to the tank, plus an equal sized addition of Phantasm - which is dehydrated NZ Marlborough Sauvignon Blanc skins. These skins have high concentrations of Thiols, which the yeast metabolize into aromatic compounds. Fermented with a blend of Kveik up to 96F and fermented under pressure, this is the fastest brew to glass that we've ever done! Brewed 4/14, tapped 4/19! Show Less
