Islay Cask

Magnificent still cider matured in whisky casks. The peat does come through, softening the flavour. The apples are superb with a residual sweetness offsetting the dry. It is amazing what can be produced when using the right apples and barrel aging.

The 2021 Vintage is the juiciest and most accessible of the Islay Cask releases from Caledonian Cider Co. I love peat, it’s toned down a bit in this one, and the juicey apple vibe are ramped up to the max. Here’s to Bonfire Night 🍎🏴󠁧󠁢󠁳󠁣󠁴󠁿🎉

1/3 pour from a 750ml bottle. 2021 version. Peat smoke, soured apples and heavy tannins with a little TCP on the nose. Lightly medicinal, very dry finish.

Green apple, vanilla and peaty phenols on the nose. Apple and lemon on the palate with soft tannins. Hint of nuts and lingering smoke on the finish.

Trying to go global on World Cider Day. The cider is a bit hazy with the color of faded old gold, whiskey character on the nose, nice tannins, smokey/whiskey finish

Lots of smoke on this, if it were a beer I would liken it to some of the Rauchbiers. Juicy and sharp, followed by the dry smoke. Nice

The cider itself lacks a bit of mouthfeel, pretty watery and not super fizzy, the Islay barrel aging is amazing though, that light smokyness/peatyness works terribly well
