For this grape lambik, we let lambik sit for four months with Riesling pomace. The maceration happened on a single oak barrel. The lambik we used was two-year old 3 Fonteinen brewed lambik from two different brews.

The Riesling grapes come from Henning Harth from Harth+Harth winery, a biodynamic and Demeter-certified winemaker from Saulheim, Rheinhessen, Germany. This grape lambik was bottled straight after maceration. 100% 3 Fonteinen brewed lambik.
