Fjords of Green

Kveik yeasts are traditional strains of yeast from specific villages and brewers from Norway where it has been used to ferment beer for centuries. The owners of the yeasts have been gracious enough to share their strains now, and we have made a beer inspired by the beers of the area but with our own twist. Fjords of Green uses a specific kveik strain to ferment completely dry. We brewed this beer as we would any if our IPAs, but with the addition of raw wheat and freshly harvested (literally just days old) Colorado Rocky Mountain spruce tips. We focused on the Citra hop to complement the spruce tips and worked carefully to make sure both the spruce and hops worked together and didn’t overpower each other.
