Sky Cheetah

Brewed in honor of HopCat’s new Kalamazoo location, inspired by the nickname given to the Peregrine Falcons that live atop the downtown 5/3 building.
This brew takes traditional Farmhouse Ales to new heights, using 100% Brettanomyces fermentation to bring out characteristics of farmhouse “funk” and dryness. Crisp and dry mouthfeel, like that of dry white wine. Pale yellow in color with moderate yeast haze, topped with a dense white head. Mild malt aromas mix with bright, citrusy, tropical hops and a distinct Brett funk. Flavor follows aroma giving off assertive tropical fruit flavors of pineapple and passion fruit from the Brett yeast and Mosaic hops.
