Alpha Solera Blackberry

The formulation of this beer started over three years ago when we began growing up many different types of mixed culture bacteria. We aged small batches of beer for 6 months to over a year until we found the cultures we liked the best. One of these cultures was added to a larger fermenter to age and develop. When the beer tastes right, a portion of the batch is removed and fresh wort is added back to the original batch. The beer re-ferments developing further exhibiting new more distinguished and complex flavors. This has been done multiple times over months and the batch has been aging for a year and a half now. A portion of the batch was transferred into another fermentation vessel where it was re-fermented with Andean Mora. These South American blackberries possess a more flavorful tanic skin then the locally available blackberries you are probably accustomed to. The finished product is tart and complex. It is truly something to be savored and could have only been achieved from years of development. Cheers! Show Less
