Acid Factory: Goo|veik

This sparkling creation is inspired by the future and informed by the past. Fermented and aged in wine barrels, lasting complexity and a distinct acid profile are produced by blending yeasts and bacteria, including a Norwegian yeast revived from near extinction. This strain comes from a diverse family of mixed cultures, known as Kveik, evolving as they were shared between towns and passed down through generations of brewers. Sediment is a normal result of bottle conditioning and may be swirled and enjoyed or avoided by pouring carefully.
