This waterless dessert mead was made using only Southern Highbush Blueberries and Florida Holly Blossom Honey. This honey was chosen for its rich notes of caramel, butterscotch, and vanilla.

This Florida Holly Blossom honey is a once in a decade early spring super blooming of Yaupon holly (Ilex vomitoria), American holly (Ilex opaca), High-bush Gallberry (Ilex coriacea) and Dahoon holly (Ilex cassine). It should not be confused for regular Gallberry (Ilex glabra) honey that is available every year.

Unlike wild blueberries, which are small and contain little juice, these S.H. blueberries were huge, juicy, sweet, and the best we've ever tasted!

Local Gallberry Blossom Honey. Known for its richness and elegance, the honey has a buttery molasses note

aged the mead for months on a special blend of oaks. This oak treatment not only adds its own spice and vanilla notes, but most importantly gives the mead a nice clean finish.

Korintje cinnamon has been made famous by Cinnabon for its incredible aromatics and rich flavors, making it the perfect cinnamon for desserts.

Finally we let the mead mature on multiple pounds of grade A Madagascar vanilla beans. Read Less

A special select blend of three Florida honeys, Palmetto, Black Mangrove, Gallberry, and matured with a blend of American and French Oaks.

For Florida BAST we decided to blend three of our favorite lesser known Florida honeys. The different ratios of each produced very different results, we went with the blend that resulted in the most complex journey of flavors showcasing the citrusy cotton candy sweetness of Palmetto, the rich caramel with a hint of bitterness from the Gallberry, and the incredibly smooth butterscotch of the Black Mangrove honey.

We aged this mead in a neutral barrel loaded with a blend of different types of oaks (species, formats, toasts) to let the micro oxidation weave everything oak has to offer into the mead. Read Less

The bees gather nectar from every flower growing in a specific area during a season's bloom, and then turn it into a unique honey.
