India Pale Ale, or IPA, is the world’s most popular style of craft beer. To us that’s not surprising considering it’s one of our favourite beers to drink. As this IPA pays respect to our love of American West Coast IPAs, and of course the humble hop, we have aptly named this beer 'Homage'. Simco, Amarillo, Ella and Cascade ensure this beer bursts with resin and pine, whilst displaying layers of stone fruit. Pale Ale, Wheat, and Biscuit malts provide a solid malt backbone, whilst some acidulated malt provides a lovely brightness on the palate that enhances the hop flavours. Any true IPA needs a firm bitterness and at 66 IBUs this beer delivers.This is all combined into a neat little 6.2% ABV package. Enjoy. Read Less

In collaboration with Tequila Tromba and a legendary crew of #melbourne cocktail bartenders, an ‘Agave Sour’ beer was created. Agave, the base ingredient of Tequila, has been combined with chargrilled pineapples in a pinch of Mexican spice, then kettle soured....Think sour, spice and all things...

The Lark whisky barrels were individually hand selected based on their unique sensory characteristics. The brewers and distillers tried samples from countless Lark whisky barrels, discussing which casks would work best for the beer aging process. Once selected, they were emptied of the whisky and shipped directly across the Bass Strait to the brewery. They were then filled within seven days with an imperial version of the Johnny Smoke Porter (JSP) which was left to age. The result is an Imperial Smoked Porter rich with whisky barrel aged flavours of vanilla, mocha, choc orange, citrus, dark chocolate, molasses and espresso. Once the casks were emptied they were returned to Lark Distillery where they were filled with a hand selected single malt whisky to be released as 'The Wolf Release' - a unique whisky that reflects this adventurous and collaborative journey. A true West Coast Red IPA - hops, hops and more hops balanced by lovely caramel malts. This beer is characterised by a punch of citrus, pine and stone fruit hops on the nose followed by aromas of toasted malts. The forward palate comes with a wave of resiny hop flavour followed by a strong malt backbone which is balanced by a dry rear palate and a signature IPA bitterness. The lovely red colour comes from a secret mixture of caramal malts, Maris Otter and biscuit malt. Despite the heavy hopping regime the malts provide balance without being cloying or too sweet. Aroma's of bright and zesty pineapple, mango, tangerine, and guava are supported by a flavoursome forward palate of layers of the same juicy, tropical hops. A slightly bready and oaty middle palates evolves to a complex but perfectly balanced rear palate mix of a slight bitterness and a clean lacto sourness expression. Finishes refreshingly bright, with a short puckering sensation.

Wolf of the Willows 'hosted' Berlin gypsy brewers Parasite Produktions to create a New England Sour that showcases the hop ‘terroir’ of the Hellertau region in Germany.
By taking the background of the Wolf of the Willows Acidulus kettle souring technique, they have drawn on new world German hops; Herkules, Hüll Melon, and Hallertau Blanc. Massivly dry hopped during fermentation, showing freshly cut cantaloupe and honey dew melon.
The inclusion of wheat and oats create a haze that has been kettle soured with lactobacillus and fermented with the Wolf of the Willows unique yeast strain. The yeast lends itself to zesty pineapple and citrus finishing rounded and refined, with a short lacto zing. Read Less
