Since Day One, we’ve been abundantly forthright about our lust for hops. It’s led us to craft many an IPA, most of them imperial—some intense for their time and all timeless in their intensity. For Stone Go To IPA, we’ve embraced our hop obsession in a new way, funneling an abundance of lupulin-borne bitterness into a “session” IPA that delivers all the fruity, piney character of a much bigger IPA at a more modest ABV level.

To accomplish this, we employed “hop bursting.” The result is an alpha-acid-rich beer that fans can enjoy more of Without settling for less of the assertive hop character you, like us, crave.

This ain’t no just-add-juice approach. This one is for adults. We use bountiful whole tangerine purée, which brings pithy, crisp bitterness to the citrus flavor. In addition to the complexities of the tangerine — the likes of which you can only get by using the whole fruit — we judiciously employ just a hint of whole pineapple for a backnote (you’d likely not even pick it out of the mix if we didn’t tell you it was there). When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. Sourcing classic Cascade from the Pacific Northwest and Australian Galaxy hops from…yes…Australia, we made a beer both lovers of frothy peaks and hoppy green buds will be stoked about. At the same time, we stayed true to our San Diego roots by pushing the hop boundaries of this style. While some might think it lingers on an edge far closer to an IPA, with all the dry-hop flavor and aroma, it’s actually right in line with the current-day interpretation of a West Coast pale. Ours just so happens to have an Aussie accent that’s cascading with a juicy amount of grapefruit and passion fruit hoppiness. So veg out or venture out. New England-style IPAs are all the rage. Fans of Stone repeatedly ask for our take on the style, which can be met with some criticism. Rooted in West-Coast style IPAs for decades, how would we do it? Fear no more. Our brewers took the approach to deliver incredibly hoppy and aromatic flavor while keeping it very balanced, and upping the alcohol unnoticeably - nailing this astounding one-of-a-kind creation.

Overall, this unfitered double IPA is juiced up with masve Loral & Mosaic tropical & citrus notes. The mild bitterness and relatively dry body compliment the style, and the residual maltiness nicely rounds it out. Lingering lime peel and tropical fruit derived from the hops stand out on the finish, begging one to seek out more.

Other folks with great taste loved it too, but we were focused on how much we liked it, and we felt it was truly sublime. That euphoria didn't last long though, as it was soon replaced with the grim reality that when we sold out of it there wouldn't be any more. For us. And that was simply unacceptable. In our Brewers’ Tasting Panel, we all get excited every time we sample one of our new beers for the first time. When we absolutely nail a beer, and get exactly what we were hoping for on the first swing, we call it a homerun. This morning’s (hey, we’re professionals!) taste panel was definitely a homerun. Or, as Brewing Supervisor Mike Richmond commented, “this one has got the love.” We brewed this beer using the same ingredients as in our classic Stone Ruination IPA, but bumped up the malt to achieve its elevated 10.8% ABV. And of course we jacked up the hops as well. Not just in the boil, but we doubled the dry-hop amount, using a 50/50 blend of Centennial and Citra. The combination is, dare I say, magic. Read Less

The beer was first brewed in September 2015 to support music and arts education programs in Pataskala, Ohio, where Stone co-founder Greg Koch grew up. People there loved it, so we added the beer to our seasonal lineup. The deep crimson hue is courtesy of a fairly new special German malt variety by BESTMALZ called Red X. Dry-hopped with Mosaic, Cascade and Amarillo hops, this beer is incredibly citrus-forward, rounded out with biscuit and toffee notes. We think you’ll find this red IPA to be quite deliciously satisfying, no matter how you choose to pronounce it. Read Less

In these late nights and wee hours that hallowed responsibility falls to the shoulders of the overnight Brew Crew. These brewing vanguards brave the long nights, often alone, to do what needs to be done. Most areas of the brewery are dark or in shadows. Throughout the night the cellars resonate with the occasional knocking of expanding and contracting pipes. It can be a bit spooky to hear the brewery creak and groan as if possessed by a spirit randomly knocking about with a mallet. This IPA, brewed with a striking array of hops, honors our intrepid overnight team by naming it after their mischievous poltergeist companion - the Ghost Hammer. Read Less
