This kettle sour is inspired by the Napoleon. Not the famously undersized general, but rather, the flaky, cream-filled pastry. We began the process with a wheat heavy grain bill which we ran off and kettle soured before boiling with lactose, a milk sugar. We then added a ridiculous quantity of pure raspberry puree to the fermentation and let it all bubble away until the flavors developed and the yeast was finished. What resulted is a fantastically fruit-forward brew with a raspberry aroma, striking appearance, and a refreshingly sweet/tart finish. Read Less

We then pressed, puréed and otherwise manipulated fresh peaches until we could squeeze them into chardonnay barrels along with a mix of Brettanomyces cultures. After a few months of aging, she took on a new life. Effervescent, spunky & dry, with fruity peach and Brett bursting out of the glass with the help of prickly carbonation. We reworked our Dunkel recipe a bit to up the influence of the dark side. Don’t be afraid though, this brew features big chocolate backing up an intense Munich malt character. Only Munich and Carafa malts were used in the grist before we boiled it all up with a few Noble hops. A long lagering and slow carbonation process results in a deliciously dark lager with a silky smooth mouthfeel. While not strictly traditional, this Dunkel is a brewers’ favorite. A barrel aged, dry hopped, brettanomyces spiked Saison is best brewed with friends. In this case, our friends from Ex Novo Brewing joined us to collaborate on this very special bottle release. We began by brewing a Saison with hard, red, Colorado wheat then fermented it with the French Saison strain. It then underwent aging in barrels with two strains of Brettanomyces before being dry hopped with Southern Passion hops. Bottled and conditioned to traditional, very high, Saison carbonation levels, this beer will be fruity and hoppy now and will develop more funky, Brett character as it ages. Read Less

We boosted up the grain bill for a bit more of a punch and followed up with more souring, more lactose, to sweeten it up, and most importantly twice the raspberry. This Belgo IPA pours a hazy yellow and is brimming with aromas of grapefruit, lemon, pepper, bubblegum, and cut grass. We used our House Belgian yeast strain to ferment the wheat and oat heavy grain bill and the resulting fruity esters and spicy phenols work in concert with a heavy handed hop bill which include 2018 harvest Cascade and Chinook from Billy Goat Hop Farm in Montrose Colorado. These hops kick it out for sure and play well with the Citra and Tettnang that lay the base.
