It all starts with the base of light wheat ale and then.. it goes the other way. The way that is strange and obscure, but it leads us to the crisp results. This is one of the most complicated brews we have ever done. It’s been kettle soured with lactobacillus and then fermented with raspberries at a rate of 100 kilos of berries per 1000 litres of beer. A pinch of salt adds up to the light body and the dryness in the aftertaste of this brew. Read Less

This is the most bready beer we have made to this day. When we started designing it, we decided we are going to overfill this brew with rye so it has as much rye bread character as possible.
Along with base malt and some specialty malts rye was thrown into this beer in three different shapes. The first and the most known is malted rye. Then there’s fermented rye malt that is mostly know for being widely used in kvass production. Along with all those malts we introduced some wood-fired oven-dried rye bread loaves. They were added into lautering process in order to extract even more rye character.
The smell of this beer resembles kvass. In the taste rye adds a rich bready note to it while being slightly spicy but crisp at the same time. Rye is rich in beta glucans. This adds incredible viscosity that can’t be confused with anything else.
Continental hops balance out the sweetness of this beer without introducing too much fruitiness. Along with neutrally fermenting ale yeast this lets the rye character shine trough. Read Less

This beer was brewed in collaboration with Christiania Bryghus from Copenhagen. It's a pretty classic Berliner Weisse style example with some additional fruitiness.This light bodied ale is brewed with Pilsner and wheat malts and clocks in at around just 3.5 abv. Our house lactic culture makes it sour. Some additional sourness is brought by the natural passion fruit puree that we used in the secondary fermentation. In order to boost it's fruity character even more we dry hopped this beer with Citra and Mosaic hops. Another interesting aspect of it - fruity fermentation. For the first time we used Fermoale Citrus yeast which is an aromatic yeast strain obtained from hybridization. It has really well pronounced lemon like profile. Read Less
