Effectively Seasoned is a multi-year ensemble with an average age >46months at bottling. This amalgamation includes a puncheon of our favorite Colorado Méthode Traditionnelle spontaneous beer from every brew season we have engaged in thus far, and is an equal fusion of six brew years (16|17, 17|18, 18|19, 19|20, 20|21 and 21|22). Given our excitement for unobfuscated terroir, Effectively Seasoned resides as our favorite fermentation project to date. Our "Copper Blend" has Champagne-like brioche and nutty qualities, notes of toasted orange peel, burnt caramel, and musty oak cellar, and showcases restrained acidity, pleasant bitterness and tannic structure that is ready for enjoyment now but is designed to age gracefully. Our second effervescent stone-fruit offering, this two-year aged spontaneous beer was refermented on Colorado-grown Red Globe Peaches from Hotchkiss for ten months before bottle conditioning for six months with local Alfalfa honey.
Sun-warmed fuzzy peach skin, fresh squeezed orange juice, and sweaty blue cheese aromas jump out of the glass. The intensely fruity and funky nose juxtaposes more delicate Bellini-like flavors. This beer is incredibly dry, firmly acidic with subtle carbonation. We think of Harbored in the Fuzz as the funkier brother to "So Last Season: Nectarine"! Read Less

After years in the making, this is our first release truly shaped by the techniques of traditional Oude Kriek. With a base of 3-, 2-, and 1-year aged spontaneous beer and a substantial quantity of Colorado-grown sour cherries (>500 grams/liter Montmorency and Balaton), we're super proud of this beautiful and complex beer that bursts with whole fruit aromas of both cherry flesh and pit-derived baker's spice from a long maceration (eight months). Maximum Hijinx is our two-year old spontaneous beer further refermented on 2018 Harvest Colorado-grown Montmorency Cherries for nine-months before bottle conditioning an additional ten-months with local Alfalfa honey. This offering has been three years in the making! Maximum Hijinx pours a lovely coral pink with white head and huge floral aromatics. While very light and refreshing, don’t be surprised if this cherry offering has you tasting peach, strawberry, and cranberry all layered under an ever-changing vinous aroma. We find this beer to be incredibly dry, tannic, and pleasantly acidic with a balance reminiscent of Rosé Champagne. Read Less

BMDC is a blend of 3- and 2-year old Méthode Traditionnelle (MT) beer (e.g., Lambic-inspired spontaneous beer) from Primitive Beer macerated on whole organic raspberries with 1-yr MT beer from Wild Provisions.

The idea for this collaboration stems from fond memories of Belgium. Among the experiences within the Pajottenland and Senne River Valley that continue to reverberate in our collective mindset, we have a specific recollection of fresh raspberry Lambic served from the tank at De Cam Geuzestekerij as well as framboise blended by Brasserie Cantillon and served tranquil from a beer engine at Moeder Lambic in Brussels. A couple of our favorite experiences with Lambic matured on raspberries continue to stand out and motivated our blend. Read Less

Our previous 2-Year fruited Méthode Traditionnelle blend, So Last Season: Montmorency Cherry, spent an additional year in fresh Family Jones Rye Whiskey barrels. Colorado Alfalfa Honey was used as the priming sugar for bottle conditioning.

We get a big, bright nose of freshly sliced peaches that’s immediately followed by swirling barrel-aged spirits and brown sugared oak. A moderately tannic structure counterbalances fruit sweetness and a bold spirit-like warming sensation. In this three-year oak-matured release inspired by our favorite Belgian Peche beers, the combination of fruit, house funk, and Rye-whiskey are fresh yet timeless like the ever eternal seesaw of high- and low-waisted pants. For the second release in our "Exercise in Fruitility" series, we rescued a pallet of sanguineous ripe organic Mexican raspberries from a fate so unspeakable it won't be spoken. We've always wanted to play with raspberries, but consistently have difficulty finding a large enough harvest within our Colorado confines to make Framboise an option. When this pallet of raspberries knocked on our door, we couldn't refuse the opportunity. The resulting blend, with an MT3 base and stainless maceration, is a true celebration of all things jammy and berry-forward! The nose on this beer is fresh raspberry yogurt and the tannic finish keeps us reaching for moire.

*While we normally stick to our self-imposed rule of only using Colorado-grown ingredients, we bend that rule for collaborative endeavors as well as this new series, and in both cases we'll continue to make apparent the use of "non-Colorado" additions. This series began through multiple conversations with our friendly neighborhood fruit dealer about shipments of gorgeous organic berries that were turned away from major grocery store chains. A large part of our ethos is waste reduction and we never want to see agricultural gems end up in a landfill after so much labor, water, and energy went into growing, packaging, and shipping them across the globe. As a result, we present to you our "Exercise in Fruitility" series, where we rescue perfect fruits destined for the landfill and instead find them new homes in our fermentations. Read Less

In the summer of 2018, we foot-stomped 1200lbs of Rainier cherries to traditionally macerate and release the juices of our sweet, golden, Colorado gems. The Must (juice and skins from the crushed cherries) was rested in our koelschip for the evening and the juice subsequently separated from pomace (solid portion of the Must) and fermented in open upright puncheons. Following a brief primary fermentation, this spontaneous cherry wine was blended with our one-year old traditional spontaneous beer and racked into freshly emptied Colorado whiskey barrels for a two-year maturation period. Three years in the making, this complex digestif is bottled Still (uncarbonated), a choice inspired by examples of our favorite Belgian Oude Lambic, although quite different in flavor!

This three-year old Méthode Traditionnelle spontaneous beer is contemplative, wild, and warming. We get a huge nose of deep dark forest, old library books, and swirling barrel aged spirits. The flavors remind us of caramelized cherries dried in the sun with burnt brown sugar, summer attic funk, and hints of fresh strawberries, with oxidative, herbal, and oak characteristics that trend towards Sherry and Vermouth.
