Spur is a massive in-house favourite here at Polly’s with Arron routinely naming it as his favourite beer that we produce, and the proof is in the pudding – the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The newest hype hop finally landed in our cold store just as we were arranging a collaboration with our friends at Chamonix-based Big Mountain Brewing Co, and it seemed as if it were written in the stars to use this hop for the occasion. Paired up with a Polly’s stalwart in Citra, and named for Scott’s truly awful George Takei impression, this beer is absolutely massive on pineapple, coconut, and creamy tropical fruit flavours. A big part of our ethos here at Polly’s is getting the absolute max out of every ingredient we use to brew with.

This is all on show with Every Piece Matters – two of our favourite hops in Citra and Mosaic receive the Augment treatment, as bright citrus notes meld with tropical fruit punch flavours to produce an IPA which is all about super low bitterness and high juiciness.

After such incredible feedback on the four previous iterations of this beer, we were itching to brew it again; this time with every one of the techniques we’ve learned over the last four and a half years. An amplified version of our phenomenally popular Citra Mosaic IPA from our dearly departed Originals range; bringing all those incredible hop characteristics to the fore; with bright, punchy citrus fruit notes, backed up with tangerine, berry and bubblegum notes from the freshest possible crops of these Stateside slammers. We love our DDH pales, don't get us wrong, but sometimes there's nothing better than a straight up, unfussy, clean and crisp pale ale. A beer specifically made with smashability in mind, Lupo Capisco is brewed with the masters of simplicity in mind - our heroes over at The Kernel, who make in our opinion the best pales in the UK. Hopped with a relatively easygoing dry-hop charge of 20kg of Azacca and Citra, this is a beer perfect for those after work pints we love so much. Soft, juicy, and crisp. The biggest beer we’ve ever brewed by a country mile; in-house favourite Spur is amplified to the max, with an insane 60kg of Azacca, Simcoe and Citra thrown in for a dry hop rate of 29g/l giving massive amounts of stone fruit, peach, mango, and passionfruit flavours bursting throughout. A beer perfect for our new water profile directly influenced by the profile used at Other Half NYC, and fermented with our house strain of LA3 for maximum suspension. Bridging the gap between classic bitterness along with modern softness and juiciness is something we're always looking to straddle the fine line between, and Whut! is an expression of this passion to walk the fine line. A hearty addition of Mosaic in the whirlpool adds a gentle, but pronounced earthy bitterness to this beer, whilst our dry-hop charge of equal 5kg additions Bru-1 and Mosaic, along with a hefty 20kg of Citra brings those sweet, tangerine, and bold pineapple notes with an undercurrant of citrus bitterness to compliment the whirlpool addition. Way back in his university days, Head of Sales Arron made a little bit of extra cash on the side by spinning turntables at parties. After mentioning it in passing in the brewhouse, it piqued our interest and we asked if there was any evidence remaining of his record spinning abilities. A file was presented within our brewery WhatsApp group labelled “An Original Mix!” and lo, a beer name was once again born at Polly’s. Our original mix is a seamless beat-matching of Galaxy, Mosaic, Chinook and Citra for an all out hop assault on the senses. Stone fruit, juicy tropical notes, and bags of citrus flavours are abound in this hyped up IPA. Read Less

When we were working with our amazing pals at North Brewing Co last year, we were astounded at how little whirlpool hops they added in the first stage of the brewing process. Imparting less bitterness is something we've been keen to explore in our beers, and we achieved this through bringing the whirlpool temp down, and whirlpooling for much less time, meaning more hops for dry-hopping! Almost 40kg of Citra, Enigma, Galaxy, Mosaic, and Simcoe ended up going into this beer during fermentation, and the results stand for themselves. An absolute juice bomb of a beer, and possibly our best to date. Read Less

You asked, and we responded - Kyra is back! First brewed in 2020 to rave reviews, and then again in 2023, this is perhaps one of our most requested beers across the entire board. A beer born out of a passion for all things Mediterranean, and the incredible citrus fruits that populate this region of the world, we very carefully looked through our available hops and tried to replicate those same citrus notes through our dry-hop bill. Packed to the nines by using a pyramid hop addition of Galaxy, Vic Secret and Enigma to impart, in our opinion anyway, all those orange, citron, and pomelo flavour characteristics that we love so much; this is a beer that we feel is pure sunshine trapped in a glass, to remind you to savour those warm, hazy evenings that will soon be a feature of our days once again. A beer named in homage to the streamlining of our brew plans; meaning our brew team were edging ever closer to getting their normal sleeping patterns back after nearly two years of 6am starts and 8pm finishes; this is a beer that celebrates the advancement of where we are from a technological standpoint here at Polly’s.

A beer absolutely lavished to the nines with an enormous hop bill of Citra, Simcoe, Ekuanot, and Mosaic; a punchbowl of tropical fruit notes, including mango, papaya, passionfruit, and just the slightest bit of grapefruit dance around the palate for a DIPA that is all about juice and low bitterness. When we set out with the recipe for this beer, we decided on a three way dance of modern beer's best varietals, so what better to go for than a triple threat of ultra hype hops Galaxy, Mosaic, and Simcoe? Calling back to that first IPA that put us firmly on the map back in 2018, Everything Works Again - named for an ism in the brewery when we finally sorted out the electrics in the brewhouse, and put an end to months of our brewkit shorting out mid-brew - takes the foundations laid by that OG Polly's beer and brings it roaring into 2021. A big IPA all about the juice; Slacks is a conscious effort on our part to aim for a 6% beer, but fill it with all the flavour intensity and body of one of our stronger IPAs. Hopped to the nines with 30kg of Enigma and Mosaic to bring all those stone fruit, papaya, and mango notes right up to the fore, Slacks is named for an in-joke from this year’s Polly’s Christmas party, where Arron – ever the fashionista – turned up in some let’s say, questionable slim fitting trousers (and we’ve never let him live it down since). Thankfully there is nothing questionable about this straight up murky juicebomb of a beer. Delicious. Read Less

Of course, you've just gotta slam those ultra-rare South Pacific hops together to create a full on tropical fruit salad NZ/Australian Antipodean IPA! Enigma takes the lead as the base hop in this beer; imparting a whole host of redcurrant and crisp pinot gris notes, before a equal measures of Galaxy and Nelson Sauvin take the party to juice town - bringing super ripe gooseberries, clean peach and pineapple notes, and a final lashing of passionfruit, before NZ blends The Betty and The Bruce bring their unique orange blossom flavours to round things off.
