After macerating for a few months, it was back blended with 1year old lambic and bottled for refermentation

Probably the most complex blend we made so far. ‘Tannin’ started with a piquette. In 2020 we used some Müller Thursday and Pinot Blanc grape skins from Julien Renard in Mosel. After fermentation it was blended with 2 year old lambic. In 2021 we blended it with more fresh grapes: Riesling and Muscaris. Pressed the concoction again and added some young lambic.
