IT WAS DEVASTATING TO HAVE TO CANCEL HOP CITY 2020 (WE REMAIN HOPEFUL OF BEING ABLE TO BRING IT BACK IN SOME CAPACITY LATER IN THE YEAR). HOWEVER, OUR ANNUAL COLLABORATIONS WITH OUR FRIENDS FROM ACROSS EUROPE AND THE US LIVE ON.

We’d already started discussing multiple recipes and those involved were unanimously in favour of seeing these through to fruition, even if they couldn’t attend themselves.

We teamed up with some of the most exciting breweries in Europe right now in the shape of Garage (Spain), Brouwerij Frontaal (Netherlands) and Pastore (UK) to work on this refreshing spring sour IPA. We led with 100g/l of the stone fruits peach and apricot, and backed these up with mango, cinnamon and vanilla pods as well as maltodextrin for body and mouthfeel. We blended this fruited kettle sour with an IPA packed with oats and wheat and dry-hopped with Azacca to complement the stone fruit character and bring notes of melon and passion fruit. Read Less

It’s a classic to bring a sour to the party for our annual birthday releases, and when we were looking for a brewery to help us create just the types of sours we love here at Polly’s, we couldn’t look further than the excellent work that Pastore were producing down in Cambridge. A brewery we had a humorous first encounter with - our resident representative of all things Polly’s Arron accidentally hijacking a meet the brewer they were holding in London (before apologising profusely and passing the reins back to Ben and Chris!) back in 2020, we’ve revelled every time we’ve been able to find their beers in bars local to the brewery. Wanting to leap on our shared passion for heavily fruited sour beers, we wanted to create a beer that was equal parts sweet and moreish, but with a defined puckeringly tart edge - step forward passionfruit and lime. Our collaboration beer brings over a tonne of fruit to the party to create a thick, pulpy sour that has that sweetness that sends our fans wild, but with a big hit of dry limey sourness that hits right in the cheeks. Pastore have long been on our list of breweries we want to collaborate with. Based in Cambridge, they have a passion and skill for creating super fresh fruited sours and barrel aged and blended wild ales.
In this beer, we’ve turned up the abv up to 6% , used a huge dose of oats and wheat and a touch of milk sugar for a fuller body and to bring out all of those sweet juicy fruity flavours!
We love how sour Pastore’s beers are so we dropped the Ph real low. Raspberry and blueberry kick it all off with their vibrant colour and juicy delicious tart zaps, whilst peach brings its aromatic and sweet rounded notes. A sprinkle of gingery spice kicks out huge aroma and caramelised flavour bringing a crumbly cheesecake vibe on the finish. Read Less

Another look at the tarot cards with Amy Hastings.

The Magician, numbered 1 in a tarot pack, has associations with Mercury burning red close to the sun. He's usually illustrated as cloaked in red, with symbolism of the four elements and surrounded by flowers and foliage.

Teaming up with our friends at Pastore, we took these ideas to put together a deep red, lightly tart ale loaded with cherries and accentuated with intensely deep red colour and delicate aromatics of hibiscus.

The result is smoothie-thick cherry and hibiscus sour. Magic. Read Less

BA Flanders Red with Pinot Noir Skins, Redcurrants and Cherries

Collaboration with Pastore Blending and Brewing

This Flanders Red style beer was fermented on Pinot Noir skins from grapes grown in Crouch Vale, Essex brought to us by our friends at Pastore. After three months on the skins we blended it with stock beer aged in red wine barrels. The resultant blend was conditioned on 100g/l of local Scottish redcurrants and third-use whole Frederiksdal sour cherries. Drink young or age, this will get weirder. Read Less

Our tart Berliner Weisse base has been dialled up with caramelised limes and then balanced off with a delicate drizzle of honey.
