Sunnyside Dweller is the closest thing we have to a core beer. Introduced in the fall of 2015, it was our inaugural lager. All these years later, it remains our go-to — a crisp, clean, 5.1% pilsner with a citrusy noble hop character and an assertive bitterness that mellows over time.

Brewed with unadulterated Loudoun County water and a simple grist — Pilsen malt with just a touch of Vienna and Carapils — Sunnyside Dweller is constructed to exhibit one of our favorite hops: Spalter Select. We add this newish-school German varietal in the boil and then again after fermentation, imbuing our unfiltered pilsner with a bursting bouquet of lemon and classic herbal notes. Read Less

It comes but once a year. Our homage, in spirit, to the iconic California triple IPAs we fell in love with many moons ago. A formidable yet ever-so-beckoning brew to help us weather the calendar’s coldest stretch. Talking Backwards.

This is the tenth iteration of Talking Backwards, and while we’ve made some tweaks over time, the fundamentals of our annual triple IPA remain the same. It’s constructed almost entirely from a split of Britain’s premium Maris Otter and some good ol’ pilsen malt. And it’s hopped with the holy trinity of Pacific Northwest varietals: almighty Citra, Mosaic, and Simcoe.

2025 Talking Backwards received a Simcoe kettle addition, then doses of Citra Cryo and Mosaic during whirlpool. After primary fermentation, we dry-hopped this 10% triple IPA with a symphony of all three hops. We’ll never not be in awe of the magic conjured by this cultivar trio: tangerine, melon, passion fruit, and berry, balanced by a touch of pine and dank resin.

And befitting the decade milestone, we’ve given cans a fresh new look. Just a little start to our 10th year festivities…

Introduced in the summer of 2015, Home* was loosely inspired by one of the great San Diego IPAs — Alpine Nelson. In that spirit, we brew Home* with a tender kiss of rye, lending a very light spice to an otherwise clean grist of pilsen malts.

First and foremost, though, this 6.7% IPA features the magical union of Freestyle Nelson Sauvin and Citra. There’s nothing like the collision of these New Zealand and U.S. hops: crushed white grape and a distinct dankness meets orange citrus zest, melon, and tropical fruit salad.

While we had fun returning Home* to its West Coasty roots for our tenth anniversary, this batch was fermented with the peachy Vermont yeast strain we’ve come to know and love in the IPA more recently.

All these years later, Home* is still where we want to be. Read Less

One of our most-requested IPAs, Mi Corazón showcases the pairing of Galaxy — the undisputed champ of Australian hops — with Yakima Valley’s almighty cultivar Citra. Grown on opposite corners of the Pacific Ocean, these two hops combine to unleash flavors of melon, zesty citrus, passion fruit, guava, and all kinds of other drippy tropical fruits.

As always, Mi Corazón remains pillowy soft — its Best Malz pilsen base buttressed with a boatload of oat malt and flaked oats.

One of Jack's first Ocelot recipes, Gorgeous & Alone was reverse engineered to bring the je ne sais quoi of our annual triple IPA Talking Backwards to a more crushable package. Similar malt character, same hops, all at an approachable 7%.

We brew Gorgeous & Alone with pilsen malt and just enough English pale malt to evoke the color of its big brother. The beer is then hopped with the Pacific Northwest’s holy trinity — Citra, Mosaic, and Simcoe — for that classic bouquet of citrus, berry, passion fruit, and pine.

We hope this IPA brings you some joy — wherever you go, wherever you land. Read Less

Mr. Kite has been a staff favorite since he walked into our lives seven years ago. Brewed with pilsen malt, both flaked and rolled oats, and chit, this 6.8% IPA is soft and cuddly while still finishing with a refined dryness. Just the way we like ‘em.

Only two hops run through Mr. Kite’s veins: Nelson Sauvin and almighty Citra. The finest of the bines, from New Zealand to the Pacific Northwest. And this particular batch of Mr. Kite marks the first deployment of our 2025 @FreestyleHops Nelson Sauvin selections. Harvested less than four months ago in Sunrise Valley, this lot blew us away with massive grapefruit notes, waves of complex tropical fruits, and just enough white grape to remind you it’s Nelson Sauvin. One of the first beers we canned, Thought Control pairs almighty Citra with New Zealand’s bright and beguiling Motueka.

Motueka is a crazy cultivar — big on tropical lime and pineapple, complimented by a touch of herbal and spicy notes. In Thought Control, its fruit character is amplified by Citra, which plays its own familiar tune of melon and orange citrus zest.

The 6.6% IPA is silky smooth but quenching, constructed from a grist of pilsen malt, flaked wheat, and malted oats. Pairs perfectly with dark sarcasm. Read Less

Break My Balls has always been our deepest exploration of Mosaic, a famously kaleidoscopic Pacific Northwest varietal. The 6.6% IPA is hopped exclusively with that expressive cultivar in both cryo and T-90 pellet form. Peach and apricot leap out of the glass, complimented by subtler notes of pineapple and berry.

When we resurrected Break My Balls a year ago, we opted to give it a summer-friendly refresh. Thus, a West Coasty IPA was born, brewed with pilsner malt and Maris Otter. Turns out, this was the perfect backdrop for Mosaic’s dank cannabis side all along. There’s no turning back now.

Space Cadet is our Galaxy-Amarillo IPA. 6.5%. A svelte all-barley grist — half pilsner malt, a quarter pale malt, a quarter Crisp Haná malt. Fermented with our house ale strain for only a mildly obstructed view to the cosmos.

The Aussie-PNW hop duo are applied equally at both stages. 50/50 whirlpool. 50/50 dry hop. As we know, Galaxy is a big ‘ol bully, so it dominates this beer with a tropical noogie of passionfruit, guava, and nectarine. But there’s no mistaking Amarillo’s orange blossom in the mix.

The progenitor of the genus ????????. The apexiest predator. The ghost ??? the darkness. Big Cat.

Big Cat is a 9% double IPA made in collaboration with our pals at The Veil.

We conjure this fulsome feline with a ton of Golden Promise pale malt, plus both flaked and malted oats. We feed it Citra during the whirlpool, then Galaxy, Freestyle Nelson Sauvin, and even more Citra in the dry-hop. This Pacific Northwest + Southern Hemisphere combo brings massive notes of tropical fruit, crushed white grape, melon, and orange citrus.

Don’t try to run in a zig-zag if you encounter a Big Cat. Just accept your fate. Read Less

Lucky You is an exercise in simplicity… even at 8.2%. It begins with a light, approachable grist — pilsen malt with just enough flaked and malted oats. From there, it’s all one hop: almighty Citra. Citra in the kettle. Citra during whirlpool. And, finally, massive Citra dry-hops both during and after fermentation.

As usual, we find this pale-hued beer emitting deep, vibrant notes of melon, papaya, mango, and sweet orange citrus.

A 50-50 split of Galaxy and Nectaron after primary fermentation. Combined, this Australian x New Zealand x Pacific Northwest “tag” team yields vibrant streaks of guava, passion fruit, peach, pineapple, and a touch of orange citrus.

Brewed with flaked barley and plenty of oats, this is one soft, pillowy IPA that’s, dare we say, quite juicy.

The imperial version of our dearly beloved house-ish IPA Home*, this 8.4% brew is loaded with perhaps the two greatest hops on god’s green earth: almighty Citra and our hand-selected Freestyle Nelson Sauvin. For this batch, we used both hops at whirlpool and then again for a walloping dry hop. You’re intimately familiar with the majesty of this PNW-NZ combo: crushed white grape, red grapefruit, and a touch of dankness meets orange citrus zest and melon. Got it? Now make it even more majestic.

As with Home*, we brew this double IPA with pretty much just pilsen malt and a touch of rye.

This 6.8% IPA showcases one of our very favorite trios of Pacific Northwest hops: Citra, Mosaic, and Amarillo.

In Livewire, we add Mosaic during the boil, Citra Cryo in the whirlpool, and then a big mix of all three for the dry-hop. We’ve always found that Amarillo, with its distinctive notes of orange blossom and sweet citrus, draws out similarly orange citrus qualities from Citra. And then Mosaic does magical Mosaic things: tropical fruit, blueberry, pine, and bubblegum.

As with the last batch, we brewed Livewire with pilsen malt and a hefty charge of malted oats and flaked wheat. The result is one lush, fluffy beverage. Read Less

A 6.5% IPA, Peace Train showcases the interplay of almighty Citra and the Australian varietal Vic Secret.

Grown in the state of Victoria, Vic Secret — aka “Baby Galaxy” — brings the kind of vibrant tropical fruit notes that only seem to emerge from Down Under soil. Its soft passion fruit character and touch of dankness are punched up by Citra, which lends its own melon and orange citrus.

Seamless debuted eight years ago. Since then, it’s gone from 500mL bottles to 16oz cans, donning four different labels along its journey. Its yeast has evolved. We’ve tweaked its grist in subtle ways. And yet this IPA remains at its core an ode to our favorite Pacific Northwest varietal. It was, is, and will forever be Seamless.

Seamless is hopped entirely with Citra. Citra in the kettle. Citra Cryo at whirlpool. More Citra after primary fermentation. Citra on Citra on Citra. One could even call the hop profile… seamless. Expect vibrant notes of melon, grapefruit, and lychee.

Even though it still weighs in at a relatively formidable 6.7%, Seamless stands lean and mean. It was brewed primarily with pale malt — a simple base ideal for a svelte crusher. Sure, we introduced a wrinkle with malted rye… but all grains make way for sun-soaked Citra bliss.

This 6.6% IPA was the wedding beer of our head brewer Jack Snyder and his wife Kerry when they tied the knot five l years ago. (The name is cribbed from a lyric to “Gila” by Baltimore’s Beach House, the first band Jack and Kerry saw live together.)

Kingdom Half Mine’s recipe descended from another of our favorite IPAs: the soft and juicy Mi Corazon. But this batch was brewed with a lux mix of Maris Otter and pilsner malt, plus malted oats and flaked wheat — all uniting for a lush, silky body. And where Mi Corazon relies solely on Citra and Galaxy, Kingdom Half Mine introduces Simcoe to the mix.

The result is a IPA dripping with Galaxy’s tropical fruit character, complimented by Citra’s melon and citrus, and balanced by Simcoe’s pine, berry, and own tropical fruitiness.

Another benefit of Simcoe? It’s the name of Jack and Kerry’s cat, as you are surely well familiar.

And since silverware is the modern fifth anniversary symbol, you’ll notice we’ve given this year’s label a special metallic sheen. Read Less

For a decade, Witching Hour has been our annual Oktoberfest release. While we once again made some tweaks to the recipe’s composition in 2025, we think this iteration is very close in color, clarity, and spirit to last year’s märzen.

The 5.4% amber lager was brewed entirely with German-grown Weyermann grains. Their heirloom barley Isaria 1924 serves as the base malt, complimented by Barke Munich, Caramunich II, and CaraHell. Given our version of a single decoction, the resulting liquid has a rich depth — toasty with a hint of dark bread — and dry finish.

Witching Hour was hopped with German Magnum and, later, Hallertau Mittelfrüh, imbuing the beer with oh-so-subtle notes of citrus, florality, and grassiness  We then transferred to tank and gave this beautiful brew three months to mature gracefully.

We’ve got a pair of Gohil's boots. We’ve got fading roots. We’ve got amazing powers of observation. And, once again, we’ve got a Little Black Book.

Every chapter of our Little Black Book is a little different. This iteration of the evolving milk stout lands at a profoundly sessionable 5.2%. The body is smoother and creamier than ever too. Maybe Little Black Book is born with it; maybe it’s the mix of Maris Otter base malt and seven specialty grains. Who can say? The touch of lactose milk sugar certainly doesn’t hurt, though.

Pouring jet black, this little number boasts big notes of bittersweet chocolate with a hint of coffee, with a slightly more reserved roast than previous incarnations. And we’re excited to have Little Black Book back in cans for the first time in several years. Of course, you’ll still be able to find it on nitro at the brewery. Read Less

Made with our dear friends Charles Towne Fermentory, this 4.7% crusher melds our beloved German pilsner Sunnyside Dweller with their equally beloved light American lager Yacht Party.

To start, we lighten the hybrid lager’s pilsen malt foundation with Yacht Party’s flaked rice and flaked maize. Then, late in the boil, we combine Spalter Select — the bright, lemony hop that defines Sunnyside Dweller — with two other German varietals: Magnum and Hallertau Mittelfrüh.

The result is a soft, complex, quenching lager with citrusy undertones. Read Less

A Castle in Brooklyn? In this economy?!? Yup, this 6.8% IPA showcases the interplay of Azacca and Segal Ranch Anchovy — the former a big, bright fruit salad of mango, tropical fruit, and orange citrus; the latter a veritable watermelon Jolly Rancher with a touch of pine and melon. These varietals, employed mightily in the dry-hop, are amplified by whirlpool additions of kaleidoscopic Mosaic.

While we’ve shed Cashmere for the summer, Castle in Brooklyn’s grist has remained more or less consistent through the years. Pilsen malt. Malted and flaked wheat. Flaked rye. Chit. Everything you need for a soft, radiantly tropical IPA that we’ll gladly call home.
