We are happy to introduce Cosmic Proportions, a collaboration with Modist Brewing. Cosmic Proportions is our first beer with Omega Yeast's Cosmic Punch yeast, a thiolized strain that features vibrant grapefruit, passion fruit, and guava notes through biotransformation.
Cosmic Proportions uses Nelson and Citra in the whirlpool, with a Nelson, Citra, and HBC 586 combination in the dry hop. A hazy yellow pour opens up with aromas of freeze-squeezed OJ, tropical fruit skittles, and lime wedges. This milk stout was brewed with house-roasted Ecuadorian cocoa nibs, fresh ground Stumbeano's espresso roast coffee beans, and peanut & lactose additions.
Distinct aromas of peanut butter and iced mocha come through immediately. At first sip, an initial flavor of nuttiness is followed by the beautifully bold taste of espresso, alongside its pronounced roasted bitterness. Rounding out the flavors is creamy dark chocolate for an overall flavor profile reminiscent of sipping on an iced mocha mixed with Reese’s Peanut Butter Cup cereal.

J.D.A. utilizes an experimental method of brewing called 'dip-hopping', which essentially translates to a bonus hop addition early in the brew process. We took the almighty Citra Cryo hops and steeped them at a warm temperature to obtain gigantic hop character without any bitterness. Way back when, the crew from Modist was up here for Foolers’ Ball and we decided to smash our goofy heads together to brew a beer. We both love traditional lagers but we both also have these terrible urges to do weird shit and kick tradition to the curb. Those impulses lead us to dreamed up and schemed up Clean Up Crew using a very special new lager yeast that cranks out thiols like it’s nothing we’ve seen before. So yeah, it’s a Thiolized Lager that’s razor crisp and loaded with notes of funky white grape, guava, passionfruit, and ripe cantaloupe. It’s like if we took a nice, normal, traditional lager and then sucker punched with a pile of strange new and fruity flavors. Sorry, not sorry. Read Less
