Made using a single pilsner malt and Cascade and Galaxy hops. It has the pale straw colour normally associated with lagers but is less carbonated and definitely an ale. Fruity and less bitter than the IPA. This ale will accompany light white food such as fish but also has enough punch from the galaxy hops to accompany bolder flavours as well.
We designed this beer to cross the border between ale and lager. Ale is a drink that is becoming more and more popular among both young and old drinkers. But old associations of ale being ‘an old man’s drink’ are hard to break down. This is the beer for the job. Pale as a lager but with the full flavour of an ale. A golden ale made by blending pale ale and amber malted barley. It has two bittering hops Phoenix and Pride of Ringwood and two aroma hops Celeia and Cascade resulting in a hoppy refreshing citrus crispness which makes this beer very popular.
In some pubs this ale is simply known as the Elephant Beer. This ale is all about hops. Not something you’d usually associate with elephants. True, but traditionally this style of beer was exported to India and so it would often be displayed with that countries most noticeable mammal. (Hops have natural antibacterial properties, so the more hops you put into a beer the greater its chances of surviving the long sea voyage to India) Elephants are quite huge and so are the quantities of hops we shove into this beer (that’s as good as your going to get). The Crispin Inn in Sandwich. Run by Terry and Pam, The Crispin is located in Sandwich next to the Old Toll Bridge crossing the River Stour as it starts to form its estuary to the North Sea. This 1491 medieval timbered beam building is host to a great friendly pub restaurant featuring traditional English and Caribbean cuisine. Periodic music evenings publicised on Facebook lead to a great balance of easy dining and a vibrant evening scene.
Terry commissioned the creation of his own ale to add to the uniqueness of his pub. Terry and some of his customers joined the Mad Cat team to brew the first batch of this beer and has been involved all the way through several developments with feedback from his customers. Now it is a 4.0% dark amber malty ale balanced with a gentle hoppiness that seems to be well established on his bar along with a diverse range of other Real Ales. Read Less

This year (2015) we’ve developed the Pow Wow recipe. We loved last years Pow Wow, however it seemed to divide opinion. Some really liked the bitterness and hoppiness of the ale, but for some the bitterness was too much. We like to make beer that the majority can enjoy. So this year we kept the hoppiness but reduced the bitterness. We did this to make it more sessionable for the majority rather than just the die hard mega-hop-fanatics. Dark malts lend a dry bitterness to stouts, with hints of coffee and dark chocolate. These are good things, when that bitterness is balanced with the right amount and varieties of hops and caramel malts. We chose our hops for their dark fruit flavours, but used them sparingly, only enough to balance, and no more. Oats are added to the mash to increase the body and smooth down the mouthfeel. British Hops (Challenger and Bramling Cross nurtured in Kent) and American hops (Centennial, grown in Washington) combine in this distinctive hoppy, fruity and spicy ale to stand firm against the evils of the world.
American Pale Ales are in vogue at the moment. They are normally characterised as having high quantities of very citrussy american hops. We love them. With this beer, however, we wanted to do something a little different. We wanted to create a distinctive brew with a blend of both English and American Hops, that is, an Anglo-American Pale Ale. English hops, specifically Bramling Cross and Challenger, often offer a smooth bittering and gentle but distinctive aroma. A good start. We then add a small amount of American Centennial hops for an extra edge of citrusy aroma. We sell this both as a strong ale and to some pubs even as a session ale! We have it available all year round, because of these qualities. Read Less
