Brewed with a blend of Pilsen malts from Vermont Malthouse and Valley Malt. Raw wheat from Nitty Gritty Grain Company and North East Kingdom Grains. A special beer to share with you for Foam Brewers 4th Anniversary. Spontaneous Dot Elderberry is a Vermont grown beer naturally fermented and conditioned using the wild countryside yeast and bacteria. This beer was fermented and aged in oak and expresses a lively earthy acidity that’s jammy with a light natural tannic wine funk. ⠀

In the Fall of 2016, we set forth to brew our first Vermont spontaneous grown beer. We aptly chose Andrew Peterson's farm malthouse that is situated around Boyers Fruit orchard in Monkton. Under the cool night sky where the Vermont wild yeast blows we allowed this dextrin rich wort made from Vermont grown and malted barely, raw wheat from Nitty Gritty Grain of Charlotte, and a touch of aged hops from Homestead Hops of Starksboro settle in for the evening. We followed up with the same process in 2017 where both vintages sat untouched in 500 liter oak barrels. In the fall of 2018 we blended and finished this beer off with Elderberries from @Thorn Hill Farm of Greensboro. Following a final barrel fermentation and aging, we bottle conditioned this beer in the summer of 2019 with Burlington’s own BTV honey.

This spontaneously fermented American Wild Ale was brewed in the fall of 2016. Brewed w/ barley from Peterson Quality Malt, raw wheat from Nitty Gritty Grain & a few aged hops from Homestead Hops. The wort was driven to Boyer's Orchard in Monkton, next to Peterson Quality Malt’s original malthouse. The wort sat there overnight in a coolship of sorts, providing time & space for the wild yeast & bacteria of the land to inoculate the wort as it rested and temps cooled. This process was repeated in 2017, & after each vintage fermented & developed, they were blended together in the fall of 2018, when the beer was moved onto blueberries from Isham Family Farm in Williston. Spring 2020 we brewed a beer with our friend Jim Williams owner/baker of Backdoor Bread in Charlotte. We asked Jim if he would bake a bread of his choice to complement a mixed culture beer fermented in oak. Jim chose to make a bread with 100% Thornhill Farm rye. Made in Northern European (Germany/Scandinavia) style.
Long, sourdough fermentation. Baked dark for the maillard in the crust. When not added to a beer, best sliced thin, eaten with cheeses, cured meats or just some honey. The grist of the beer is Peterson Quality Pilsen, Triticale and Nitty Gritty raw wheat. Loaves of the rye were added during a long warm steep at the end of the process. Primary and secondary were achieved in Pinot Noir wine barrels. This is a two barrel blend that we finished with a touch of zested citrus. Read Less

Once primary fermentation was complete, this Wild Ale went to rest into red wine barrels prior to a final fermentation atop Montmorency Tart Cherries from @brecknockorchard and wildflower honey from Foam and HOF’s Nordic Farm Apiary. Pleasant funk combine with light cinnamon notes and cherry flavored lifesaver before a clipped, dry finish. Read Less
