In our interpretation of this German classic, we used gulf salt from our friends over at Gulf Coast Salt Works. The resurrection of this antiquated style offers a new array of unique flavors. Tart and salty. Fruity and spicy. A low pH during fermentation allows the yeast to create unusual esters reminiscent of apricots and peaches while a spicy undertone comes through from the addition of coriander to the whirlpool. Occasionally, the stars align and a match is made in heaven. When we got the opportunity to work with the guys from Nelson’s Greenbriar Distillery, to produce this Belle Meade bourbon barrel aged Belgian Dubbel, that is exactly what happened. Dubbel Barrel boasts bold malt flavors of caramel and toffee which are complimented by tones of dark fruit and clove spice. A complex barrel character of vanilla and maple syrup is finished with the trademark rye spice of Belle Meade Bourbon. The addition of orange peel and cherry make this an old-fashioned match made in heaven.
