Sartori Harvest Fresh Hop IPA, brewed only once a year, when in the midst of the annual hop harvest the fresh Centennial hops are harvested from Sartori Hop Ranch (near Chilliwack) and transported back across the Strait of Georgia to our brew kettle in Victoria within a 24-hr rush.

When brewed in their natural form, the hop flowers are still sticky with raw oils and resins; imparting the coveted flavours and aromas of citrus, pine, and melon -which is best enjoyed as fresh as possible.

We have been harvesting the same Centennial hops from the same plot of land since 2008, showcasing a delicious flavour profile unique to the growing region. Sartori Harvest IPA was also the very first IPA we brewed as Driftwood (Fat Tug IPA followed a year later!) and was a pioneer of the fresh hop beer movement in B.C.

Our interpretation of this Southern-Belgian farmhouse ale employs a long-grain bill and the addition of freshly-ground black pepper to the Brew Kettle. We use the versatile Ardennes yeast from Belgium, adding notes of bubblegum, banana and cloves to this Saison’s sturdy malt backbone.

Food pairings:

Walnuts, pecans, cheeses such as Trappist, Livarot, or Comte.
Beef, venison, mussels.
Root vegetables, resinous herbs (rosemary, marjoram, thyme).

OG Haze holds a balance of tropical fruit aromas, juicy hop character and soft malt body that elevates this hazy North Eastern IPA into the carefully crafted realm of distinction from Driftwood Brewery.

For us what makes a NEIPA interesting and distinct is its reduced bitterness (compared to a West Coast IPA) and silky mouthfeel. We accomplished these by using a fairly small quantity of bittering hops and by using a lot of high-protein grains in the grist bill (un-malted oats and wheat). We added some green apple puree to the boil to set a pectin haze, and add a hint of viscosity and tartness. We also added a lot of late hops.
