In the late 1800s, hardy Wisconsinites would harvest ice from the rivers in 700lb blocks; this cold crop would be used for meat packing, cheese making, and most importantly, the brewing industry. In just one year Wisconsin brewers could consume 3 million tons of ice to make and distribute beer. In honor of this pastime, we created this “Cold IPA” which uses a lager yeast to ferment at cooler temperatures, which allows the Galaxy, Mosaic, and Amarillo hops to shine as brightly as a polished block of ice.
