While tart still, the tartness has grown friendlier, the flavors more balanced, allowing for greater complexity. Or it just goes well with the cod fish chowder I just made.

We now have very good clarity back, and taste is still complex, fruit, honey, red wine. Very interesting and enjoyable.

Boiler Maker with Elijah Craig. Well balanced. Tasted like neither one. Fun and delicious. I will have to try this with my other brews.

The spicing isn't bad, but it could have been more subtle. Great wheatbier and authentic wit yeast flavor.

First glass. Very much the original fresh cider. Tart, dry and fruity. Strong taste of local "wild" apples. This used a dry german wheat ale yeast, and the result is very interesting. I have never had a cider that tasted as much like the fresh cider.

My biggest complaint is that it could have had a stronger malt taste. Maybe it needed more melanoidin malt?
