For this Dora we decided to mess with our dry hopping process to see if we could get a bit more mileage out of our already very hefty hop load.

Dora is our exploratory series of beers where we mess around with anything/everything from ingredients to process.

For this version of Dora, we decided try a brand new liquid hop product (which we used in Dora 55 and 57 in the dry hop) in the whirlpool this time. We used it in addition to our normal dry hop and whirlpool hop charge and it provided some intense citra goodness!

Hopped with citra and only citra this Dora is extremely tropical and papaya forward with additional orange citrus notes.

We’re excited about the results of this Dora and the options it gives us for deep hop saturation moving forward!

This particular version sees us mess around with our water profile once more with the intent of cratering hardness/harshness and maximizing, you guessed it, that soft soft, cream cream. It's very soft.

Dora is our exploratory series of beers where we mess around with anything/everything from ingredients to process.

For this particular version we used a paler malt bill and adjusted our water chemistry to be softer than usual. We also dried the beer out further than is typical for us. The result is joyously easy to drink while still being soft, fluffy and full bodied.

Dry hopped largely with Citra and a kiss of both Galaxy and Mosaic, we taste citrus, mango, some danky papaya and mixed tropical undetones. Read Less

This particular version sees us push things even further toward creamland. We built one of the heftiest base beers in our repertoire, both in terms of grist and water chemistry, and assaulted it with the all star fruit trio of Citra, Sabro and the newcomer, Talus. This baby is flufffffffffFY and finishes medium dry, just the way we like it. Do they call that balance?

We taste a beautiful fruit bouquet of tangerine, coconut, mixed citrus and some hints of pink grapefruit. Intense in all the right ways. Read Less

This particular version sees us play around with a new dextrin malt called body builder. It's supposed to be good at... building body.

We then dry hopped it with a blend of Strata, Citra, and Riwaka. We taste notes of tangerine, berry, undertones of grapefruit and tropical fruit. The beer also finishes perceptively sweeter than is typical for us, which only serves to push this fruit salad to its most fruitacular. Read Less

This particular version sees us drop our dry hop temp to as cold as we’ve ever taken it while also leaving the beer a touch sweeter than is typical for us (don’t worry it’s still pretty dry).

For this version of Dora, we used a brand new trial cryo hop blend from YCH with a working title of "mango." It was used in the whirlpool

We then dry hopped it mostly with Citra (it’s always mango-ey) and sprinkled in a touch of Galaxy and Sabro. The result is a big fluffy mango, citrus bomb with hints of peach and tropical fruit. Read Less

Dora is our exploratory series of beers where we mess around with anything/everything from ingredients to process.

Right now every brew kind of feels like a Dora. We're changing something almost every brew in order to move our beer toward its most delicious final destination. We're still very much feeling out our new brewery, and though we are starting to have some processes in place we feel are "standard," we still feel it important to mess with these processes in a controlled and deliberate fashion in the interest of delicious beer science.


This particular version sees us adjust our cold side process in the interest of getting more extraction from our hops (i.e. more of that yum yum). Thankfully our cold side process has translated over almost seamlessly from old brewery to new, which is why we feel comfortable messing around with it already. And I mean, who doesn't want more hops in hoppy beer, right?

Dry hopped with Galaxy, Vic Secret, Cashmere. Huge pineapple, apricot yum city

This particular version sees us mess around with haze density. Our beers are already very hazy, but the idea of this beer was to modify pieces of our hot side process to keep extra protein in solution. As such, this baby is as hazy a beer as we've made!

We feel like we've really started to find/get comfortable with our hoppy beer game again over the last couple weeks, and as such we thought it was time to push ourselves out of that comfort zone! We tweaked the water profile toward maxed out levels of softness without any chalky minerality. It drinks like cloud pillows

For this version of Dora, we used a brand new trial cryo hop blend from YCH with a working title of "berry." The idea for the blend is to be specifically formulated to drive berry flavors. We used it in the whirlpool and then proceeded to dry hop it with some hops we find have berry notes within the smattering of other delicious flavors they bring to the table.

Dry hopped with Riwaka, Mosaic and Simcoe we taste a berry medley, layered with citrus and tropical fruits. Read Less

For this version of Dora, we decided to once again visit the largest ingredient in beer: water. This time we rebalanced the profile entirely away from all hardenss and pushed the soft and fluffy. We then hit it with the cryo trial blend with a working name "mango" in the whirlpool and followed it up with an appropriately tropical dry hop of Citra, Mosaic and Motueka. We chose the one that smelled best, regardless of whether it smelled like el dorado that has come before, and there were some truly great options on the table!

For this version of Dora, we used a brand new liquid hop product (YCH702) designed to amplify the whirlpool. We used it on top of our regular whirlpool charge and the result is one of the hoppiest, most densely saturated 6.5% IPAs we’ve ever released.

Hopped with Citra and only Citra, the result is an intense display of mango, papaya, and citrus on our typical creamy malt base. Read Less

For this version of Dora, wanted to try to reduce the husk content of our overall grain bill. This years barley is much smaller than last years and as a result there has been more husk as a percentage of the kernel.

In our opinion, reducing this makes softer beer. That’s what we tried to do here by including more dehusked cereal grains(wheat in this case) as a percentage of the grist.

Hopped entirely throughout the process with our hand selected Citra, this version of Dora throws massive, dense yellow haze with notes of OJ papaya and tropical aromatics Read Less
