Saccharomyces pastorianus yeast was introduced to Europe in the 1400s by a Patagonian fruit fly who spent most of her life buffeted about in high atmosphere jet streams before serendipitously drowning in an open beer fermenter somewhere in Europe. The discovery of this yeast catalysed the creation of Lager beers in Germany, allowing successful fermentations through the cool seasons.
Skipskatt (pronounced Skeep-scat) is Norwegian for “Ship’s Cat”. The Vikings preferred orange tabbies as mousers on their longships and these cats spread throughout Europe. The color of our Märzen is reminiscent of the ship’s cats that were, like our intrepid fruit fly, buffeted across oceans to find new homes on foreign shores. The flavor of this cool-fermented brew is dominated by malty, graham-crackery goodness and balanced by just the right amount of spicy Noble hops. Koselig (pronounced Koos-Lee) roughly translates as "coziness, intimacy, warmth, happiness and just being content". A truly unique take on one of the oldest continuously made beer styles in the world: Finnish Sahti. We started with a proprietary blend of barley, rye, wheat and spelt from Viking malsters in Denmark. Using a nearly two thousand year old brewing technique, the mash was filtered through fresh juniper boughs and fermented raw without boiling. We added about 12% Tennessee sorghum syrup from Hickman farms and Millhouse in Lynnville, TN for a local twist. The Juniper shines as the predominate flavor, with fresh earthy and spicy notes from the raw grains, and a distinct orange note from thew Kveik yeast fermentation. Read Less
