To celebrate this feat, a “more is more” approach was taken to brew a huge imperial stout. Six malts and a double mash gives a rich, roasted, chocolatey with underlying dark fruit and caramel notes. These characteristics are intensified by homemade dark candy sugar. After fermentation, half of the batch was put into OYO Bourbon barrels from Middle West Spirits while the other half was infused with cocoa nibs. After three months of aging these two were remarried resulting in a beer that is complex but not complicated, thick and rich but not cloying.
